Our process

Preparation

After cutting the sugarcane, it is transported to the milling area.

Juice Extraction

The sugarcane is processed in a mill to obtain the juices that will be used for panela production. The leftover bagasse undergoes a drying process and is used as fuel for the furnace or as organic material to fertilize the land.

Clarification

In this stage, all impurities are removed from the sugarcane juice by adding organic substances such as balso, cadillo, or guásimo.

Dehydration and Concentration

The hot juices extracted from the sugarcane are transferred from one pan to another at temperatures above 90ºC, evaporating the water and obtaining the syrups at their ideal point for molding into the desired presentation, either powder or block.

Beating

To obtain powdered panela, the syrups are manually stirred until they naturally pulverize as they cool. In the case of solid panela, the syrup is simply poured into molds.

Sifting

Once the panela is pulverized and cooled, it is passed through a sieve according to the desired grain size.
